The distinct Asian zing in Vietnamese food comes from ingredients including zesty limes, lemongrass, star anise and fish sauce. Chillies regularly feature, but most dishes tend not to be overly spicy. So if you like it hotter, side sauces and dips are a great way to turn up the temperature.
As well as being unbelievably delicious, Vietnamese food is generally very healthy, due to the use of many ingredients that are high in vitamins and minerals but low in fat.
Possibly the best-known Vietnamese delicacy is the spring roll. Ours are served either fresh or fried, bursting with vegetables, rice vermicelli and Asian herbs, and accompanied by a Moorish hoisin and peanut dip: texture and taste in perfect harmony!
They are a fantastic example of the lightness of touch and sophistication that developed in Vietnamese cuisine during the years of French colonisation. The influences of neighbours China, Laos and Cambodia can also be tasted in the country’s many, and varied, national dishes.
